These cookies feature a chewy texture thanks to the addition of stem ginger, which is ginger that’s been preserved in syrup. The addition of self-raising flour and a dash of bicarbonate of soda helps the cookies achieve their light and slightly puffed-up texture.

  • 1 tbsp golden syrup
  • 25g stem ginger, finely chopped
  • 150g self-raising flour
  • ½ tsp bicarbonate of soda
  • 1 rounded tsp ground ginger
  • ¼ tsp fine salt
  • 75g soft brown sugar

Instructions

  1. Preheat oven to 190°C (170°C fan) / 375°F. Line two baking sheets with parchment.
  2. Melt base: In a saucepan, gently melt butter, golden syrup, and stem ginger until smooth.
  3. Mix dry ingredients: In a bowl, combine flour, bicarbonate of soda, ground ginger, salt, and sugar.
  4. Form dough: Stir dry mix into the melted ginger mixture. Start with a spoon, finish with hands until a soft dough forms.
  5. Shape cookies: Divide into 12 balls. Place on baking sheets and flatten gently with a fork for a classic crisscross pattern.
  6. Bake: Bake for 7–8 minutes until lightly golden. Let cool slightly on tray, then transfer to wire rack.
