Description
An Earl Grey Custard Tart with a Buttery Shortbread Crust is a sophisticated dessert that combines two classic elements—rich, creamy custard and a crisp shortbread base. The custard is infused with the aromatic flavor of Earl Grey tea, which is made from a blend of black tea and the citrusy essence of bergamot. The shortbread crust is buttery and crumbly, providing the perfect contrast to the smooth, velvety custard filling. It’s a wonderful dessert for those who enjoy the refined flavor of Earl Grey tea and the indulgence of a classic tart.
Ingredients
Shortbread Crust
1 ¼ cups all-purpose flour
â…“ cup powdered sugar
¼ tsp salt
½ cup (1 stick) unsalted butter, cold and cubed
1–2 tbsp ice water
Earl Grey Custard Filling
1 ½ cups heavy cream
½ cup whole milk
3–4 Earl Grey tea bags (or 2 tbsp loose-leaf)
4 large egg yolks
½ cup sugar
1 tsp vanilla extract
Pinch of salt
Instructions
Make the Shortbread Crust
In a bowl, whisk flour, powdered sugar, and salt.
Cut in cold butter with a pastry cutter (or pulse in a food processor) until mixture looks sandy with pea-sized bits.
Add ice water 1 tbsp at a time until dough just comes together.
Press evenly into a 9-inch tart pan with removable bottom. Chill 20 minutes.
Preheat oven to 350°F (175°C). Prick crust with a fork, line with parchment, fill with baking weights.
Blind bake 15 minutes. Remove weights and parchment, bake another 10 minutes until lightly golden. Let cool.
Make the Custard Filling
In a saucepan, heat cream and milk until just steaming. Remove from heat, add tea bags, cover, and steep 10 minutes. Remove tea bags, squeezing gently.
In a bowl, whisk yolks, sugar, vanilla, and salt until pale.
Slowly whisk warm cream mixture into yolks (temper gradually so eggs don’t scramble).
Strain custard through a sieve for smoothness.
Assemble & Bake
Pour custard into cooled tart shell.
Bake at 300°F (150°C) for 25–30 minutes, until edges are set but center still has a slight wobble.
Cool completely, then refrigerate at least 2 hours.
Notes
This refined tart combines the delicate aroma of Earl Grey tea with a buttery shortbread base, making it an elegant dessert for tea time or special gatherings. Serve with a dollop of whipped cream or a sprinkle of citrus zest to enhance the flavors.
