Description

The Easter Carrot Cake Loaf with Cream Cheese Frosting is a moist, spiced carrot cake that’s baked in a loaf pan, giving it a more convenient shape than a traditional cake. It combines the warm spices of cinnamon, nutmeg, and ginger with the natural sweetness of grated carrots and crushed pineapple. This loaf is topped with a rich and tangy cream cheese frosting, which perfectly complements the sweetness of the cake. The cake is not only a treat for your taste buds, but it also makes for a stunning addition to your Easter or springtime table.

Ingredients

Scale

For the Carrot Cake Loaf

  • 1 ½ cups all-purpose flour

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • ½ teaspoon salt

  • 1 ½ teaspoons ground cinnamon

  • ¼ teaspoon ground nutmeg

  • ¼ teaspoon ground ginger (optional, for a warm spice note)

  • ¾ cup granulated sugar

  • ¼ cup brown sugar, packed

  • 2 large eggs

  • ½ cup vegetable oil (or melted coconut oil)

  • ¼ cup unsweetened applesauce (adds moisture)

  • 1 teaspoon vanilla extract

  • 1 ½ cups finely grated carrots (about 3 medium carrots)

  • ½ cup crushed pineapple, drained (optional but keeps it extra moist)

  • ½ cup chopped walnuts or pecans (optional)

For the Cream Cheese Frosting

  • 4 ounces cream cheese, softened

  • 2 tablespoons unsalted butter, softened

  • 1 cup powdered sugar, sifted

  • ½ teaspoon vanilla extract

  • Optional: a splash of lemon juice or orange zest for brightness

Instructions

1. Preheat oven:

  • Set to 350°F (175°C).

  • Grease and line a 9×5-inch loaf pan with parchment paper.

2. Mix dry ingredients:

  • In a bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.

3. Mix wet ingredients:

  • In a large bowl, whisk sugars, eggs, oil, applesauce, and vanilla until smooth.

4. Combine:

  • Stir the dry mixture into the wet ingredients until just combined.

  • Fold in grated carrots, pineapple, and nuts (if using).

  • Don’t overmix — just until evenly distributed.

5. Bake:

  • Pour batter into prepared loaf pan.

  • Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.

  • Cool in pan for 10 minutes, then remove and cool completely on a wire rack.
