  • 2 lbs boneless, skinless chicken breast, cut into 1-inch chunks
  • 2 tbsp Cajun seasoning (store-bought or homemade)
  • 2 tbsp olive oil, divided
  • 2 bell peppers (any color), chopped
  • 3 cloves garlic, minced
  • ¼ cup green onions, chopped (for garnish)

Instructions

  1. Marinate the Chicken Place chicken chunks in a zip-top bag with 1 tbsp olive oil and Cajun seasoning. Toss to coat evenly. Let sit while prepping the veggies.
  2. Sear the Chicken Heat remaining 1 tbsp olive oil in a large skillet over high heat. Add chicken in a single layer (work in batches if needed). Cook undisturbed for 3–4 minutes to develop a crust.
  3. Flip & Add Peppers Flip chicken pieces and add chopped bell peppers. Cook for another 2 minutes.
  4. Add Garlic Stir in garlic and cook for 1 more minute, or until chicken is cooked through (internal temp 165°F / 74°C).
  5. Finish & Serve Remove from heat. Garnish with chopped green onions and serve immediately.

Notes

Serve it over rice, mashed potatoes, or pasta for a hearty meal. For extra flavor, squeeze fresh lemon juice on top or garnish with chopped parsley or green onions!
