Ingredients
1 ½ cups shredded coconut (sweetened or unsweetened)
1 cup chocolate chips (milk, semi-sweet, or dark)
1 tbsp coconut oil or butter (optional, for smoother chocolate)
Mini candy eggs (like Cadbury Mini Eggs, M&Ms, jelly beans, etc.)
Instructions
Line a baking sheet with parchment paper or silicone mat.
In a microwave-safe bowl, melt chocolate chips and coconut oil in 20-second intervals, stirring until smooth.
Add shredded coconut to melted chocolate and mix until fully coated.
Scoop spoonfuls onto the baking sheet and shape into small “nests” using the back of the spoon or your fingers.
While chocolate is still soft, gently press 2–3 candy eggs into the center of each nest.
Chill in the fridge for 20–30 minutes or until set.
