An Everything Bagel Breakfast Casserole is a hearty, oven baked meal that uses cubed everything bagels as its structural foundation. Unlike a standard breakfast strata that might use plain white bread or sourdough, the bagels provide a dense, chewy bite that holds up incredibly well to being soaked in a rich egg custard.
Ingredients
4 everything bagels, cut into bite-size cubes
8 large eggs
2 cups milk
1 cup shredded cheddar cheese
½ cup cream cheese, cubed
1 cup cooked breakfast sausage or turkey sausage (optional)
½ cup diced bell peppers
¼ cup chopped green onions
½ tsp salt (adjust to taste)
½ tsp black pepper
1 tsp everything bagel seasoning (optional extra on top)
Instructions
Preheat oven
Set oven to 180 °C / 350 °F and lightly grease a baking dish.Layer bagels
Spread the cubed bagels evenly in the dish. Sprinkle sausage, peppers, green onions, cheddar, and cream cheese pieces on top.Make egg mixture
In a bowl, whisk eggs, milk, salt, and pepper until smooth.Assemble
Pour the egg mixture evenly over the bagel mixture. Press lightly so the bread soaks up the liquid.Bake
Bake for 40–45 minutes, until the center is set and the top is golden.Rest & serve
Let it cool for 5–10 minutes before slicing and serving.
Notes
You can assemble the casserole the night before and refrigerate it. In the morning, simply bake as directed for an easy, stress-free breakfast.
