Instructions

  • Slice peppers lengthwise and remove seeds. Set aside.

  • In a bowl, mash avocados with lime juice.

  • Stir in onion, tomato (if using), cilantro, salt, and pepper.

  • Spoon or pipe the guacamole into the pepper halves.

  • Add toppings if desired and serve immediately.

Notes

For extra flavor and texture, top the peppers with crumbled feta or cotija cheese, a sprinkle of chili flakes, or fresh cilantro. You can also add diced tomatoes, corn, or black beans to the guacamole for a heartier bite. Serve chilled or at room temperature as a fresh appetizer or light snack.
