Description
To understand the appeal of Easy Guacamole Stuffed Peppers, one must look at the marriage of its two primary components. At its simplest, this recipe involves taking small, colorful bell peppers—often referred to as lunchbox peppers—and filling their hollow centers with a seasoned avocado mash. Unlike traditional stuffed peppers that are typically filled with rice and meat before being baked in the oven for an hour, this version is raw, cold, and incredibly fast to assemble.
Ingredients
6–8 mini bell peppers (or 3 large bell peppers)
2 ripe avocados
1–2 tbsp lime juice
2 tbsp red onion, finely chopped
1 small tomato, deseeded & diced (optional)
1 tbsp fresh cilantro, chopped
Salt & black pepper, to taste
Optional toppings: feta or cotija cheese, jalapeño, corn, everything bagel seasoning
Instructions
Slice peppers lengthwise and remove seeds. Set aside.
In a bowl, mash avocados with lime juice.
Stir in onion, tomato (if using), cilantro, salt, and pepper.
Spoon or pipe the guacamole into the pepper halves.
Add toppings if desired and serve immediately.
