Description

The Steak Burrito Bowl recipe is a deconstructed burrito served in a bowl. Instead of rolled tortillas, you layer seasoned steak, rice, beans, veggies, cheese, and garnishes—all customized to your taste. It’s fresh, vibrant, and perfect for a quick dinner or casual entertaining.

For the Steak:

  • 1.52 lbs flank or skirt steak
  • Juice of 2 limes
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • Salt & pepper to taste
  • 2 tbsp olive oil
  • ¼ cup chopped fresh cilantro

For the Bowl:

  • 2 cups cooked brown or white rice (or cilantro lime rice)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (grilled or canned)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1 cup shredded romaine lettuce
  • ½ cup shredded cheddar or Mexican blend cheese
  • ½ cup pico de gallo or salsa
  • Sour cream or Greek yogurt (optional)
  • Lime wedges and extra cilantro for garnish

Instructions

  1. Marinate the Steak In a bowl or zip-top bag, combine lime juice, olive oil, spices, and cilantro. Add steak and marinate for at least 30 minutes (or up to overnight in the fridge).
  2. Cook the Steak Heat a grill or skillet over medium-high heat. Cook steak for 4–5 minutes per side (for medium-rare), or until desired doneness. Let rest for 5 minutes, then slice thinly against the grain.
  3. Prepare the Bowl Base Warm the rice and beans. Char the corn in a dry skillet for extra flavor if desired.
  4. Assemble the Bowls In each bowl, layer rice, beans, corn, tomatoes, lettuce, and avocado. Add sliced steak on top. Sprinkle with cheese and spoon over pico de gallo or salsa.
  5. Finish & Serve Add a dollop of sour cream, a squeeze of lime, and a sprinkle of cilantro. Serve warm or at room temperature.

Notes

Customize your bowl with extras like guacamole, roasted corn, or a squeeze of fresh lime juice. You can also swap the steak for grilled chicken, shrimp, or keep it vegetarian with black beans and sautéed veggies!
