For the Salad:

  • 23 cups romaine lettuce, chopped

  • 1 large cucumber, diced (Persian or English preferred)

  • 2 medium tomatoes or 1 cup cherry tomatoes, chopped

  • 45 radishes, thinly sliced

  • 1 small red onion or 2 scallions, thinly sliced

  • 1 green bell pepper (optional), diced

  • 1 cup fresh parsley, chopped

  • 1/4 cup fresh mint leaves, chopped (or more to taste)

For the Crispy Pita:

  • 2 pieces pita bread, cut into bite-size squares or triangles

  • 23 tbsp olive oil

  • 1 tsp sumac (optional but recommended)

  • Pinch of salt

For the Dressing:

  • 1/4 cup extra virgin olive oil

  • 23 tbsp fresh lemon juice

  • 1 tbsp pomegranate molasses (traditional & key flavor)

  • 11 1/2 tsp ground sumac

  • 1 small garlic clove, finely minced or grated

  • Salt & pepper to taste


Instructions

1. Make the Crispy Pita

  • Preheat oven to 375°F (190°C) (or air-fry at 350°F / 175°C).

  • Toss pita pieces with olive oil, salt, and sumac.

  • Bake 8–12 minutes until golden & crisp (watch closely).

  • Let cool — they will crisp more as they cool.

2. Make the Dressing

  • Whisk together olive oil, lemon juice, pomegranate molasses, garlic, sumac, salt, and pepper.

  • Taste and adjust — fattoush dressing should be tangy and slightly sweet.

3. Assemble the Salad

  • In a large bowl, combine lettuce, cucumber, tomatoes, radish, onion, parsley, mint, and pepper (if using).

  • Add dressing and toss well.

  • Add pita chips right before serving so they stay crunchy.
