For the Mascarpone Whip

  • 8 oz (225 g) mascarpone cheese, chilled

  • 1 cup heavy cream, cold

  • 3 tbsp honey

  • 1 tsp vanilla extract


Instructions

Make the Cake

  1. Preheat oven to 350°F (175°C). Grease and line an 8-inch round or square cake pan with parchment.

  2. In a bowl, whisk flour, baking powder, baking soda, salt, and cinnamon.

  3. In another bowl, beat butter, honey, and brown sugar until light and fluffy.

  4. Add eggs one at a time, mixing well. Stir in yogurt and vanilla.

  5. Gently fold in dry ingredients until just combined.

  6. Pour batter into prepared pan. Arrange halved figs cut-side up over the surface (they’ll sink in slightly as it bakes).

  7. Bake 35–40 minutes, or until a tester inserted in the center comes out clean.

  8. Cool completely in the pan before removing.

Make the Mascarpone Whip

  1. In a chilled bowl, whisk mascarpone until smooth.

  2. Add cream, honey, and vanilla. Whip until soft peaks form (don’t overwhip or it may curdle).

Notes
