For the Salmon:

  • 1½ lbs salmon fillet, skin removed and cut into 1½-inch cubes

  • 2 tbsp olive oil

  • Salt & pepper, to taste

  • Wooden or metal skewers (if wooden, soak in water for 30 minutes)

🔥 Firecracker Marinade:

  • ¼ cup soy sauce

  • 3 tbsp sriracha (adjust to heat preference)

  • 2 tbsp brown sugar or honey

  • 1 tbsp rice vinegar (or lime juice)

  • 1 tbsp sesame oil

  • 2 cloves garlic, minced

  • 1 tsp grated fresh ginger

  • ½ tsp crushed red pepper flakes (optional for extra fire)

  • 1 tbsp water (to thin slightly, if needed)


Instructions

1. Make the Marinade

  • In a bowl, whisk together all Firecracker Marinade ingredients until smooth.


2. Marinate the Salmon

  • Place salmon cubes in a shallow dish or zip-top bag.

  • Pour marinade over and gently toss to coat.

  • Marinate 20–30 minutes in the fridge (no longer, or the fish can get mushy from the acid).


3. Thread onto Skewers

  • Remove salmon from marinade (reserve a few tablespoons for basting).

  • Thread pieces onto skewers, leaving small gaps between cubes for even cooking.


4. Cook the Skewers

Grill Method:

  • Preheat grill to medium-high (400°F / 200°C).

  • Oil the grates.

  • Grill skewers 3–4 minutes per side, brushing with reserved marinade, until salmon is caramelized and just cooked through.

Oven/Broiler Method:

  • Line a baking sheet with foil and place a rack on top.

  • Broil on high for 6–8 minutes, basting once or twice, until lightly charred and flaky.


5. Garnish & Serve

  • Sprinkle with toasted sesame seeds and sliced green onions.

  • Serve with lime wedges and optionally steamed jasmine rice, mango salsa, or a cool cucumber salad.
