Ingredients
3 large eggs, separated
3 tbsp cream cheese, softened
(or Greek yogurt for a lighter version)¼ tsp cream of tartar (optional but helps stability)
¼ tsp salt
Optional flavor add-ins:
½ tsp garlic powder
½ tsp onion powder
1 tbsp grated Parmesan (great for savory sandwiches)
Instructions
Preheat oven to 300°F (150°C)
Line a baking sheet with parchment paper.Whip egg whites
Add egg whites + cream of tartar
Beat until stiff peaks form (they should hold shape)
Mix yolk base
In another bowl, mix egg yolks, cream cheese, salt, and any seasonings
Mix until smooth and lump-free
Fold gently
Fold the yolk mixture into the whipped whites in 3 additions
Use a spatula and gentle motions to keep it fluffy
Shape buns
Spoon into 4–6 round mounds on the baking sheet
Smooth tops slightly for bun shape
Bake
Bake for 25–30 minutes, until golden and set
Cool for 5 minutes before removing
