How to Make Vegan Banana Pancakes: A Fluffy, Delicious Breakfast Recipe

  • Author: David Andersson

Description

Vegan banana pancakes are pancakes made without any animal products, including dairy and eggs, while still maintaining that fluffy texture and delicious flavor we all love. Instead of eggs, the ripe banana serves as a natural binder and sweetener. With the addition of plant-based milk and optional add-ins like vegan chocolate chips or nuts, these pancakes become the perfect guilt-free breakfast option.

Ingredients

Scale

Dry Ingredients:

  • 1 cup all-purpose flour (or whole wheat flour)
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)

Wet Ingredients:

  • 1 large ripe banana, mashed
  • 1 cup plant-based milk (e.g., almond, soy, oat, or coconut milk)
  • 1 tablespoon maple syrup (or another sweetener like agave syrup)
  • 1 teaspoon vanilla extract

Optional Add-Ins:

  • 2 tablespoons chocolate chips (vegan)
  • 2 tablespoons chopped nuts (e.g., walnuts or pecans)
  • 1/4 cup fresh or frozen blueberries

Instructions

Prepare the Batter:

  1. In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon (if using).
  2. In a separate bowl, mash the banana until smooth. Add the plant-based milk, maple syrup, and vanilla extract, and mix well.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it’s okay if the batter is slightly lumpy.

2. Heat the Pan:

  1. Heat a non-stick skillet or griddle over medium heat. Lightly grease it with a small amount of oil or vegan butter.

3. Cook the Pancakes:

  1. Scoop about 1/4 cup of batter onto the skillet for each pancake.
  2. Cook for 2-3 minutes, or until bubbles form on the surface and the edges look set.
  3. Flip the pancake and cook for another 2-3 minutes, or until golden brown. Repeat with the remaining batter.

4. Serve:

Stack the pancakes on a plate and serve warm with your favorite toppings.

Notes

Top these fluffy pancakes with fresh berries, a drizzle of maple syrup, or a spoonful of nut butter for extra flavor. They’re also freezer-friendly—just reheat and enjoy a quick, healthy breakfast any day of the week!
