Description

At its core, a French Onion Chicken Skillet is a culinary mashup that takes the primary components of the world-famous French onion soup and applies them to tender, juicy chicken breasts. Instead of a bowl of broth, you get a rich, concentrated onion gravy that clings to the meat, all topped with a generous layer of melted, bubbly cheese.

Ingredients

Scale
  • 2 large chicken breasts (or 4 small)

  • 2 large yellow onions, thinly sliced

  • 2 tbsp butter

  • 1 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 tsp fresh thyme (or ½ tsp dried)

  • ½ cup beef broth

  • ½ cup chicken broth

  • 1 tbsp Worcestershire sauce

  • 1 cup shredded Gruyère cheese (or Swiss cheese)

  • Salt and black pepper, to taste

  • Fresh parsley, chopped (for garnish)

Instructions

  • Season the chicken
Season both sides of the chicken breasts with salt and black pepper.

  • Sear the chicken
Heat olive oil in a large skillet over medium heat. Add chicken and cook for about 5–6 minutes per side until golden. Remove from skillet and set aside.

  • Cook the onions
In the same skillet, melt butter and add the sliced onions. Cook on medium-low heat for 15–20 minutes, stirring occasionally, until the onions become soft and caramelized.

  • Add garlic and seasoning
Stir in garlic and thyme and cook for about 1 minute until fragrant.

  • Make the sauce
Pour in beef broth, chicken broth, and Worcestershire sauce. Stir well and let it simmer for 3–4 minutes.

  • Return the chicken
Place the chicken back into the skillet and spoon some of the onion mixture over it.

  • Add cheese
Sprinkle shredded Gruyère cheese on top of each piece of chicken.

  • Melt the cheese
Cover the skillet and cook for 3–5 minutes until the cheese melts and the chicken is fully cooked.

  • Serve
Garnish with chopped parsley and serve hot.
