- 4 cups crushed Oreo cookies (about 40 cookies)
- ¼ cup butter, melted
- 1 pint (2 cups) vanilla ice cream, softened
- 2 cups heavy whipping cream
- 1 jar (7 oz) marshmallow creme
- ¼ cup 2% milk
- ¼ to ½ tsp peppermint extract
- 3 drops green food coloring (optional)
Instructions
- Make the Crust
- In a large bowl, combine crushed cookies and melted butter. Toss until coated.
- Reserve ¼ cup of the mixture for topping.
- Press the rest into the bottom of a 9-inch springform pan or 13×9-inch dish.
- Freeze for 10 minutes.
- Add Ice Cream Layer
- Spread softened vanilla ice cream over the crust.
- Cover and freeze until firm.
- Prepare Mint Cream Layer
- In a bowl, beat whipping cream until soft peaks form.
- In another bowl, mix marshmallow creme, milk, peppermint extract, and food coloring until smooth.
- Fold in the whipped cream.
- Assemble & Freeze
- Spread the mint cream mixture over the ice cream layer.
- Sprinkle with reserved cookie crumbs.
- Cover and freeze until completely firm (at least 4 hours, preferably overnight).
- Serve
- Let sit at room temperature for 5–10 minutes before slicing.
- Garnish with chocolate curls or mint leaves if desired.
