Instructions

1. Prepare the Crust

  • In a medium bowl, mix the crushed chocolate cookies and melted butter until combined.
  • Press the mixture into the bottom of a 9-inch springform pan or pie dish to form an even crust.
  • Freeze the crust for 15–20 minutes to set.

2. Make the Peppermint Layer

  • In a large bowl, mix the softened vanilla ice cream with peppermint extract and green food coloring (if using).
  • Spread the peppermint mixture evenly over the chilled crust.
  • Freeze for 1–2 hours, or until firm.

3. Prepare the Chocolate Layer

  • In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.
  • Remove from heat and add the chocolate chips, stirring until smooth.
  • Let the ganache cool slightly, then pour it over the frozen peppermint layer.
  • Freeze for another hour to set the chocolate layer.

4. Add Garnish
