Ingredients
- 1 cup butter, softened
- 2 cups packed brown sugar
- 5 large eggs, room temperature
- ⅓ cup spiced rum
- 2 tsp vanilla extract
- 3½ cups all-purpose flour
- 2 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ cup 2% milk
Glaze:
- ½ cup sugar
- ¼ cup butter, cubed
- 2 tsp water
- 2 tsp spiced rum
- ½ cup chopped pecans, toasted
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 9×5-inch loaf pans.
- Cream butter and sugar until light and fluffy (5–7 minutes). Add eggs one at a time, beating well.
- Mix in rum and vanilla.
- In a separate bowl, whisk flour, baking powder, baking soda, and salt. Add to creamed mixture alternately with milk, beating well.
- Spoon batter into prepared pans. Bake 45–50 minutes, until a toothpick comes out clean.
- Cool in pans for 10 minutes, then transfer to wire racks.
- Make glaze: In a saucepan, combine sugar, butter, water, and rum. Bring to a boil, then remove from heat.
- Drizzle glaze over warm cakes and sprinkle with toasted pecans. Let cool completely.
