Ingredients
For the Pecan Crust:
- 2½ cups pecans
- 3 tbsp granulated sugar
- ½ tsp fine sea salt
- 4 tbsp unsalted butter, melted
- 1 large egg white
For the Cinnamon Custard:
- 1½ cups milk
- ½ cup granulated sugar (divided)
- ¼ cup cornstarch
- 6 egg yolks
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
For the Apple Roses:
- 2 lemons, juiced
- 4 apples (McIntosh or similar), quartered and cored
- ¼ cup sugar
Instructions
- Make the crust:
- Preheat oven to 375°F (190°C).
- Pulse pecans, sugar, and salt in a food processor until finely chopped.
- Stir in melted butter and egg white.
- Press into a 9-inch tart pan and bake 15–18 minutes until edges brown. Cool completely.
- Prepare the custard:
- In a pot, simmer milk with ¼ cup sugar.
- In a bowl, whisk cornstarch, remaining sugar, and egg yolks.
- Temper yolks with hot milk, then return mixture to pot.
- Cook over low heat until thick and bubbling.
- Stir in cinnamon and vanilla. Pour into cooled crust. Chill until set.
- Make apple roses:
- Soak thinly sliced apples in lemon water.
- Simmer sugar with lemon water, add apple slices, and let soften.
- Roll one slice into a spiral, then layer others around it to form roses.
- Arrange roses on top of custard.
