Description

Gochujang Honey Glazed Pork Chops are pan-seared pork chops finished in a sticky glaze made from gochujang, honey, soy sauce, garlic, and sesame oil. The glaze simmers briefly in the pan, thickening as it coats the pork and locks in moisture.

Ingredients

Scale

🛒 Ingredients (Serves 4)

  • 4 bone-in or boneless pork chops (¾–1 inch thick)

  • Salt & black pepper, to taste

  • 1 tbsp neutral oil (vegetable or avocado)

Gochujang Honey Glaze

  • 3 tbsp gochujang (Korean chili paste)

  • 2 tbsp honey

  • 1½ tbsp soy sauce (or tamari)

  • 1 tbsp rice vinegar or apple cider vinegar

  • 1 tsp sesame oil

  • 2 cloves garlic, minced

  • 1 tsp grated fresh ginger (optional, but recommended)

  • 2–3 tbsp water (to thin, as needed)

Optional Garnish

  • Toasted sesame seeds

  • Sliced green onions

Instructions

1. Prepare the Pork Chops

  1. Pat pork chops dry and season both sides with salt and pepper.

  2. Let sit at room temperature for 10–15 minutes for even cooking.

2. Make the Glaze

  • In a small bowl, whisk together gochujang, honey, soy sauce, vinegar, sesame oil, garlic, ginger, and water until smooth.

3. Sear the Pork

  1. Heat oil in a large skillet over medium-high heat.

  2. Add pork chops and sear 3–4 minutes per side, until nicely browned.

  3. Reduce heat to medium-low.

4. Glaze & Finish

  1. Pour the glaze into the pan.

  2. Simmer, flipping the pork frequently, until the sauce thickens and coats the chops, 2–4 minutes.

  3. Cook until pork reaches 145°F (63°C) internally.

5. Rest & Serve

  • Remove pork chops from pan and rest 3–5 minutes.

  • Spoon extra glaze over top.

  • Garnish with sesame seeds and green onions.

Notes

For extra flavor, spoon a little of the warm gochujang honey glaze over the pork chops just before serving and garnish with sliced green onions or toasted sesame seeds. These chops pair beautifully with steamed rice, sautéed greens, or a crisp cucumber salad to balance the sweet heat of the glaze.
