Instructions
- Preheat the Oven:

- Mix the Ingredients:
- In a large mixing bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, almond extract (if using), and a pinch of salt.
- Stir until the mixture is evenly combined.
- Beat the Egg Whites:
- In a separate bowl, use a hand mixer or whisk to beat the egg whites until they form stiff peaks.
- Gently fold the beaten egg whites into the coconut mixture. This step makes the macaroons light and airy.
- Shape the Macaroons:
- Using a small cookie scoop or your hands, form the mixture into small mounds (about 1-2 tablespoons each) and place them on the prepared baking sheet. Leave about 1 inch of space between each macaroon.
- Bake:
- Bake in the preheated oven for 20-25 minutes, or until the tops and edges are golden brown.
