Description
At its core, the S’mores Sandwich Cookie is a playful reimagining of the traditional s’more. Instead of assembling a graham cracker, chocolate, and marshmallow treat over a fire, we’re building those flavors right into a homemade cookie sandwich dessert.

For the cookies:
- ¾ cup unsalted butter, softened
- ½ cup granulated sugar
- ½ cup brown sugar
- 1 large egg
- 2 tbsp milk
- 1 tsp vanilla extract
- 1¼ cups all-purpose flour
- 1¼ cups graham cracker crumbs
- ½ tsp baking soda
- ¼ tsp salt
- ⅛ tsp ground cinnamon
- 2 cups semisweet chocolate chips
For the filling:
- 24–28 large marshmallows
Instructions
- Make the dough: Cream butter and sugars until fluffy. Beat in egg, milk, and vanilla.
- Dry mix: In a separate bowl, combine flour, graham crumbs, baking soda, salt, and cinnamon. Gradually add to wet mixture. Stir in chocolate chips.
- Bake: Drop tablespoonfuls onto baking sheets, spaced 2 inches apart. Bake at 375°F (190°C) for 8–10 minutes until golden. Cool on wire racks.
- Assemble: Place half the cookies bottom-side up. Top each with a marshmallow and microwave for 10–15 seconds until puffed. Quickly press another cookie on top to sandwich.
Notes
These cookies are a fun twist on the classic campfire treat! For extra indulgence, drizzle melted chocolate on top or roll the edges in crushed graham crackers. They also make a great make-ahead dessert for parties or holiday cookie platters.
