  • 6 egg yolks (from the boiled eggs)

  • 1 teaspoon white wine vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 2 tablespoons fresh chives, finely chopped

Gourmet toppings (choose 2-3):

  • Smoked salmon + capers + fresh dill
  • Crispy bacon bits + chives
  • Caviar + crème fraîche
  • Truffle oil + microgreens
  • Everything bagel seasoning
  • Paprika + fresh herbs

Instructions

1. Perfect Hard-Boiled Eggs

  1. Place eggs in a large saucepan and cover with cold water by 1 inch
  2. Bring to a rolling boil over high heat
  3. Once boiling, remove from heat, cover, and let sit for 12 minutes
  4. Transfer immediately to ice water bath and cool for 5 minutes
  5. Gently crack and peel under cool running water

2. Prepare the Filling

  1. Cut eggs in half lengthwise
  2. Remove yolks and place in a mixing bowl
  3. Arrange egg white halves on a serving platter
  4. Mash yolks with a fork until smooth
  5. Mix in mayonnaise, Dijon mustard, vinegar, salt, and white pepper
  6. Fold in fresh chives
  7. Taste and adjust seasoning as needed

3. Assembly

  1. Transfer filling to a piping bag or zip-lock bag with corner cut off
  2. Pipe filling generously into egg white halves
  3. Add your chosen gourmet toppings

Notes
