For the Steak:

For the Salad:
- 6 cups mixed greens (arugula, spinach, or romaine)
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced into half-moons
- ¼ red onion, thinly sliced
- ½ cup Kalamata olives, pitted
- ½ cup crumbled feta cheese
- 1 avocado, sliced (optional)
For the Dressing:
- ⅓ cup olive oil
- 3 tbsp red wine vinegar
- 1 tbsp fresh lemon juice
- 1 tsp Dijon mustard
- 1 clove garlic, minced
- 1 tsp dried oregano
- Salt and pepper, to taste
Instructions
1. Marinate the Steak:
- In a small bowl, mix olive oil, minced garlic, oregano, thyme, smoked paprika, salt, and pepper.
- Rub the mixture all over the steak and let it marinate for at least 30 minutes at room temperature, or up to 8 hours in the refrigerator.
2. Cook the Steak:
- Heat a grill, grill pan, or skillet over medium-high heat.
- Cook the steak for 4-6 minutes per side (depending on thickness) for medium-rare, or longer for your preferred doneness.
- Remove the steak from the heat and let it rest for 5-10 minutes before slicing thinly against the grain.
3. Prepare the Dressing:
- In a small bowl or jar, whisk together olive oil, red wine vinegar, lemon juice, Dijon mustard, garlic, oregano, salt, and pepper until emulsified.
4. Assemble the Salad:
- In a large salad bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese.
- Toss the salad with the dressing until evenly coated.
5. Top with Steak:
- Arrange the sliced steak on top of the salad.
