For the Steak:

  • 1 lb steak (sirloin, ribeye, or flank steak work well)
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp smoked paprika
  • Salt and pepper, to taste

For the Salad:

  • 6 cups mixed greens (arugula, spinach, or romaine)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced into half-moons
  • ¼ red onion, thinly sliced
  • ½ cup Kalamata olives, pitted
  • ½ cup crumbled feta cheese
  • 1 avocado, sliced (optional)

For the Dressing:

  • ⅓ cup olive oil
  • 3 tbsp red wine vinegar
  • 1 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper, to taste

Instructions

1. Marinate the Steak:

  • In a small bowl, mix olive oil, minced garlic, oregano, thyme, smoked paprika, salt, and pepper.
  • Rub the mixture all over the steak and let it marinate for at least 30 minutes at room temperature, or up to 8 hours in the refrigerator.

2. Cook the Steak:

  • Heat a grill, grill pan, or skillet over medium-high heat.
  • Cook the steak for 4-6 minutes per side (depending on thickness) for medium-rare, or longer for your preferred doneness.
  • Remove the steak from the heat and let it rest for 5-10 minutes before slicing thinly against the grain.

3. Prepare the Dressing:

  • In a small bowl or jar, whisk together olive oil, red wine vinegar, lemon juice, Dijon mustard, garlic, oregano, salt, and pepper until emulsified.

4. Assemble the Salad:

  • In a large salad bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese.
  • Toss the salad with the dressing until evenly coated.

5. Top with Steak:

  • Arrange the sliced steak on top of the salad.
  • Add avocado slices, if desired, for extra creaminess.

6. Serve:

  • Serve immediately with crusty bread or pita on the side, if desired.

Notes

Add a handful of kalamata olives or a sprinkle of crumbled feta for even more Mediterranean flavor. You can also toss in some cooked quinoa or orzo to make it a more filling meal. A drizzle of tzatziki sauce works great as a creamy dressing alternative!
