Description

The Green Goddess Avocado Salad is a deliciously creamy and flavorful dish that blends a variety of fresh vegetables, healthy fats, and proteins into one vibrant salad. This salad features an avocado-based dressing that is smooth and creamy, offering the perfect contrast to the crunchy vegetables and hearty toppings like chicken, eggs, and chickpeas. The green goddess dressing, made with avocado, cilantro, parsley, and lime, is what truly sets this salad apart, providing a tangy yet satisfying flavor profile.

Ingredients

Scale

For the Salad:

  • 10 cups lettuce of choice
  • 14.5 ounces low-sodium chickpeas (canned)
  • 1½ cups cooked chicken, shredded
  • 8 hard-boiled eggs, peeled and chopped
  • ½ cup radishes, thinly sliced
  • ⅓ cup red onion, finely chopped
  • ¼ cup cilantro, chopped
  • ¼ cup parsley, chopped

For the Dressing:

  • 1 large avocado, peeled and pitted
  • ¼ cup olive oil
  • 1 lime, juiced
  • 3 tablespoons apple cider vinegar
  • ½ cup parsley, chopped
  • ⅓ cup cilantro, chopped
  • 1 tablespoon honey
  • ½ teaspoon salt
  • 1 teaspoon black pepper

Instructions

  • Prepare the Eggs: Boil eggs for 12 minutes, then peel and chop.
  • Make the Dressing: Blend avocado, olive oil, lime juice, apple cider vinegar, parsley, cilantro, honey, salt, and black pepper until smooth. Add a splash of water if needed.
  • Assemble the Salad: Arrange lettuce on a serving platter. Top with chickpeas, chicken, eggs, radishes, red onion, cilantro, and parsley.
  • Dress & Serve: Drizzle with dressing, toss gently, and enjoy!

Notes

For an extra burst of flavor, top this salad with roasted seeds (like sunflower or pumpkin) or a handful of microgreens. It pairs beautifully with grilled fish or can be enjoyed on its own as a refreshing, nutrient-packed meal. Best served fresh to enjoy the creamy avocado at its peak!
