Instructions

  • Marinate the Chicken: In a bowl, mix olive oil, salt, black pepper, garlic powder, smoked paprika, and lemon juice. Coat the chicken and let it marinate for 30 minutes.
  • Grill the Chicken: Heat a grill pan over medium-high heat. Cook the chicken for 5-6 minutes per side, until fully cooked. Let it rest for 5 minutes, then slice.
  • Prepare the Dressing: Whisk together olive oil, apple cider vinegar, Dijon mustard, honey, salt, black pepper, and oregano.
  • Assemble the Salad: In a large bowl, combine romaine lettuce, cherry tomatoes, red onion, avocado, grilled corn, feta cheese, and toasted almonds.
