Picture this: juicy sweet corn, kissed by grill char, combined with creamy ripe avocado, crunchy onion, a touch of jalapeño heat, all brought together with a bright lime-and-cilantro dressing.


Ingredients

  • 4 ears fresh corn, husks removed (or ~3 cups grilled corn kernels)

  • 2 ripe avocados, diced

  • 1 small red onion or 34 green onions, finely diced

  • 1 jalapeño, seeded & minced (optional for spice)

  • 1/2 cup fresh cilantro, chopped

  • 12 cloves garlic, minced (optional)

  • 1/4 cup fresh lime juice (about 2 limes)

  • 23 tbsp olive oil or avocado oil

  • 1/2 tsp sea salt (more to taste)

  • 1/4 tsp black pepper

  • Optional add-ins:

    • 1/2 cup cherry tomatoes, halved

    • 1/2 cup cotija or feta cheese (omit for dairy-free)

    • 1/2 tsp cumin or smoked paprika

    • 1 can black beans (drained & rinsed) for extra protein


Instructions

  1. Grill the corn

    • Brush ears lightly with oil.

    • Grill over medium-high heat 8–10 minutes, turning occasionally, until lightly charred.

    • Let cool, then cut kernels off the cob.

  2. Mix the dressing
    In a large bowl, whisk lime juice, oil, salt, pepper, and optional cumin/smoked paprika.

  3. Assemble salad
    Add grilled corn, onion, jalapeño, cilantro, and garlic. Toss to coat.

  4. Add avocado last
    Gently fold in avocado so it doesn’t mash. Taste and adjust salt/lime.

  5. Serve
    Chill 10–15 min or serve immediately. Best same day (avocado darkens over time).

Notes
