Instructions

  1. Prepare the Peaches:

    • Place the peaches, cut side down, on the grill and cook for about 2-3 minutes, or until grill marks appear and the peaches soften slightly.

    • Once done, remove from heat and set aside to cool slightly before breaking them into smaller pieces.

  2. Make the Dressing:

    • In a small bowl, whisk together the olive oil, fresh lemon juice, Dijon mustard, salt, and pepper. Adjust the seasoning according to your taste. This simple yet zesty dressing complements the sweetness of the peaches and the creaminess of the burrata perfectly.
