Description

Ingredients

  • 3 large peaches, halved and pitted

  • ½ cup granulated sugar

  • 1 tablespoon lemon juice

  • ½ vanilla bean, seeds scraped

  • 1 teaspoon vanilla extract

  • 1½ cups heavy whipping cream

  • 4 tablespoons confectioners’ sugar

  • 1 (8 oz) container mascarpone cheese, softened

  • 1½ cups crushed honey graham crackers

  • ¾ cup lemon curd

  • Fresh basil, for garnish (optional)


Instructions

  1. Marinate the Peaches Toss peach slices with sugar, lemon juice, vanilla bean seeds, and extract. Let sit for 30 minutes at room temp. Strain and reserve the syrup.
  2. Grill the Peaches Grill peach halves cut-side down for 3–4 minutes until lightly charred and softened. Slice into wedges once cooled.
  3. Whip the Cream Beat cream until thickened. Add confectioners’ sugar and whip to stiff peaks. Fold in mascarpone gently until just combined.

Notes

For added texture and crunch, sprinkle some crushed amaretti cookies, granola, or chopped toasted nuts on top. A drizzle of honey or balsamic glaze can also elevate the flavor beautifully.
