Ingredients

Instructions

Step 1: Prepare the Grill

Start by preheating your grill to medium-high heat. This will ensure that the grill is hot enough to give the romaine lettuce the perfect char and smoky flavor.

Step 2: Grill the Romaine

Take the 2 heads of romaine lettuce and carefully slice them in half lengthwise. Brush the cut sides with olive oil and season with salt and pepper. This step is essential because the olive oil will help the romaine develop a beautiful char while seasoning it perfectly.

Now, place the romaine halves on the grill, cut-side down. Grill for about 2-3 minutes or until you notice some grill marks and the lettuce starts to wilt slightly. Flip the romaine halves and grill for an additional 1-2 minutes. The goal is to achieve a slight char while still maintaining the crisp texture of the lettuce. Once done, remove the romaine from the grill and set it aside to cool slightly.

Step 3: Make the Caesar Dressing

While the romaine is cooling, it’s time to make the Caesar dressing. In a medium-sized bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, Worcestershire sauce, minced garlic, and salt and pepper. Once the ingredients are combined and smooth, stir in the grated Parmesan cheese. The Parmesan will add an extra richness to the dressing, making it creamy and delicious.

Step 4: Assemble the Salad

Now that the romaine has cooled slightly, it’s time to assemble the salad. Place the grilled romaine wedges on a large serving platter. Generously drizzle the Caesar dressing over the grilled romaine. You can add as much or as little dressing as you like, depending on your taste.
