1½ tsp chili powder
1 tsp ground cumin
1 tsp smoked paprika
½ tsp oregano
½ tsp salt
¼ tsp black pepper
Optional: a dash of hot sauce or chipotle in adobo for a smoky kick
For the Veggies:
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
1 red onion, sliced
1 tbsp olive oil
Salt & pepper to taste
For Serving:
Warm flour or corn tortillas
Fresh cilantro, chopped
Lime wedges
Avocado slices or guacamole
Sour cream or Greek yogurt
Pico de gallo or salsa
Instructions
1. Marinate the Steak
In a bowl or zip-top bag, whisk together olive oil, lime juice, orange juice, garlic, and all seasonings.
Add the steak and coat evenly.
Seal and refrigerate for at least 1 hour, up to 8 hours.
(Longer marinating = more tender and flavorful.)
2. Prepare the Grill
Preheat your grill to medium-high heat (400–450°F / 200–230°C).
Oil the grates to prevent sticking.
3. Grill the Steak
Remove the steak from the marinade and let excess drip off.
Grill for 4–6 minutes per side, depending on thickness and desired doneness.
Internal temp should be 130–135°F (54–57°C) for medium-rare.
Transfer to a cutting board, tent loosely with foil, and rest for 10 minutes.
4. Grill the Veggies
Toss sliced peppers and onions in olive oil, salt, and pepper.
Grill in a grill basket or directly on the grates for 5–7 minutes, until tender and slightly charred.
5. Slice & Serve
Slice steak thinly against the grain.
Serve on warm tortillas with grilled veggies and your favorite toppings.
