Ingredients
For the Chocolate Cupcakes
1 cup (130 g) all-purpose flour

1 tsp baking powder
½ tsp baking soda
¼ tsp salt
¾ cup (150 g) granulated sugar
½ cup (120 ml) buttermilk (or milk + 1 tsp vinegar)
½ cup (120 ml) hot coffee or hot water
⅓ cup (80 ml) vegetable oil
1 large egg
1 tsp pure vanilla extract
For the “Graveyard” Filling
4 oz (115 g) cream cheese, softened
½ cup (115 g) unsalted butter, softened
2 cups (240 g) powdered sugar, sifted
2 tbsp unsweetened cocoa powder
1 tsp vanilla extract
Pinch of salt

For Decoration
Crushed chocolate cookies or Oreos (for “dirt”)
Milano cookies or graham crackers (for “tombstones”)

Instructions
1. Bake the Cupcakes
Preheat oven to 350°F (175°C). Line a 12-cup muffin pan with cupcake liners.
In a bowl, whisk together flour, cocoa, baking powder, baking soda, and salt.
In another bowl, whisk sugar, buttermilk, oil, egg, vanilla, and hot coffee until smooth.
Add dry ingredients to wet and whisk until combined. Batter will be thin.
Divide evenly among liners (about ⅔ full).
Bake 18–20 minutes, until a toothpick comes out clean.
Cool completely on a wire rack.
2. Make the Filling
Beat cream cheese and butter until smooth.
Add powdered sugar, cocoa, vanilla, and salt; beat until fluffy.
Chill briefly (10 minutes) if it’s too soft to pipe.
3. Assemble the Sandwiches
Slice each cupcake horizontally into two layers.
Pipe or spread a generous layer of frosting onto the bottom half.
Sprinkle some cookie “dirt” on top of the frosting.
Place the top half back on, slightly askew for a “cracked grave” look.
4. Decorate the Graveyard
Write “RIP” or spooky messages on Milano cookies or graham cracker halves using black gel or melted chocolate.
Insert one “tombstone” cookie into the frosting layer of each cupcake sandwich.
Sprinkle with more crushed cookies and add candy pumpkins, bones, or gummy worms crawling out of the “grave.”
