Description

Cauliflower Fried Rice is a healthy substitute for traditional fried rice. Instead of using regular white rice, you use cauliflower rice—cauliflower that’s been chopped or grated into small, rice-sized pieces. The cauliflower rice is sautéed with vegetables, eggs, and seasonings to create a flavorful, satisfying dish.


Ingredients

  • 1 medium head of cauliflower (about 4 cups riced)

  • 2 tablespoons vegetable oil (or sesame oil for extra flavor)

  • 2 large eggs, beaten

  • 1 cup mixed vegetables (peas, carrots, bell peppers, etc.)

  • 3 green onions, chopped

  • 2-3 cloves garlic, minced

  • 2 tablespoons soy sauce (or tamari for gluten-free)

  • 1 teaspoon sesame oil (optional, for flavor)

  • Salt and pepper to taste

  • Optional protein additions: cooked chicken, shrimp, tofu, or edamame


Instructions

Step 1: Prepare the Cauliflower Rice

First, you need to make the cauliflower rice. Start by removing the leaves and stem from the cauliflower and cutting it into florets. You have two options here:

  • Option 1: Place the florets in a food processor and pulse until the cauliflower resembles small grains of rice. This is the quickest and easiest method.

  • Option 2: If you don’t have a food processor, you can use a box grater to grate the cauliflower into small rice-like pieces. This method will require a bit more elbow grease, but it works just as well.

Once the cauliflower is riced, set it aside and move on to the next step.

Step 2: Cook the Eggs

Heat 1 tablespoon of vegetable oil (or sesame oil for extra flavor) in a large skillet or wok over medium heat. Once the oil is hot, add the beaten eggs and scramble them until fully cooked. Remove the eggs from the skillet and set them aside.

Step 3: Sauté the Vegetables

In the same skillet, add the remaining 1 tablespoon of oil. Now, add the minced garlic and sauté it for about 30 seconds, just until it becomes fragrant. Be careful not to burn the garlic. Next, add the mixed vegetables and sauté them for about 3-4 minutes until they are tender.

If you’re adding any optional protein (chicken, shrimp, tofu, or edamame), this is the time to include it. Cook the protein with the vegetables until heated through.

Step 4: Add the Cauliflower Rice

Now, stir in the prepared cauliflower rice. Cook the mixture for about 5-7 minutes, stirring frequently. You want the cauliflower rice to become tender but not mushy. Keep an eye on it and stir to avoid burning or overcooking.

Step 5: Season the Fried Rice

Once the cauliflower rice is cooked to your liking, it’s time to season the dish. Add the cooked eggs back to the skillet, followed by the soy sauce (or tamari for gluten-free) and sesame oil (if using). Stir everything together to combine. Taste the dish and adjust the seasoning with salt and pepper as needed.

Step 6: Finish and Serve

Finally, sprinkle the chopped green onions over the fried rice and stir to combine. Let everything cook for an additional minute, then remove the skillet from heat. Your cauliflower fried rice is now ready to serve.

Serve the dish hot as a side or main course, and enjoy your healthy, low-carb alternative to traditional fried rice!

Notes

For added protein, toss in scrambled eggs, tofu, or cooked chicken. You can also mix in extra veggies like bell peppers, snap peas, or baby corn for a colorful, nutrient-packed dish!
