  • 1/2 cup Greek yogurt
  • 1/4 cup fresh cilantro
  • 2 tablespoons fresh chives
  • 1 tablespoon lime juice
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 2 tablespoons olive oil

Optional toppings:

  • Crumbled feta or goat cheese
  • Microgreens
  • Lime wedges
  • Hot sauce
  • Hemp seeds

Instructions

1. Make the Green Goddess Sauce

  1. Combine Greek yogurt, cilantro, chives, lime juice, garlic, and salt in a blender
  2. Blend until smooth and creamy
  3. Drizzle in olive oil while blending
  4. Set aside (can be made up to 3 days ahead)

2. Prepare the Vegetables

  1. Wash and chop spinach into bite-sized pieces
  2. Slice avocado just before serving
  3. Mince jalapeño (if using)
  4. Slice green onions
  5. Toast pumpkin seeds in a dry pan for 2-3 minutes until fragrant

3. Cook the Eggs

  1. Heat olive oil in a large non-stick skillet over medium-low heat
  2. Add chopped spinach and cook until wilted (about 1 minute)
  3. Beat eggs with salt and pepper
  4. Pour eggs into the pan with spinach
  5. Scramble gently until just set and creamy
  6. Remove from heat

4. Warm the Tortillas

  1. Heat tortillas in a dry skillet for 30 seconds per side
  2. Or wrap in damp paper towel and microwave for 30 seconds
  3. Keep warm in a clean kitchen towel

5. Assemble the Tacos

  1. Spread a spoonful of green goddess sauce on each tortilla
  2. Add scrambled eggs with spinach
  3. Top with avocado slices
  4. Sprinkle with cilantro, green onions, and jalapeño
  5. Add toasted pumpkin seeds for crunch
