Instructions
1. Make the Green Goddess Sauce
- Combine Greek yogurt, cilantro, chives, lime juice, garlic, and salt in a blender
- Blend until smooth and creamy
- Drizzle in olive oil while blending
- Set aside (can be made up to 3 days ahead)
2. Prepare the Vegetables
- Wash and chop spinach into bite-sized pieces
- Slice avocado just before serving
- Mince jalapeño (if using)
- Slice green onions
- Toast pumpkin seeds in a dry pan for 2-3 minutes until fragrant
3. Cook the Eggs
