For the Cherry Filling:

  • 4 cups (about 600g) fresh or frozen cherries, pitted
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon cornstarch (optional, for thickening)

For the Crumble Topping:

  • 1 cup (100g) rolled oats
  • ½ cup (60g) almond flour or whole wheat flour
  • ½ teaspoon cinnamon
  • ¼ cup (60ml) coconut oil or unsalted butter, melted
  • ¼ cup (60ml) unsweetened applesauce
  • ¼ teaspoon salt
  • ¼ cup (30g) chopped nuts (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Prepare the Cherry Filling:
    • In a mixing bowl, combine the cherries, lemon juice, vanilla extract, and cornstarch (if using). Toss gently to combine.
    • Pour the cherry mixture into a greased 8×8-inch baking dish or similar size.
  3. Make the Crumble Topping:
    • In another bowl, mix the rolled oats, almond flour, cinnamon, and salt.
    • Add the melted coconut oil and applesauce to the dry ingredients. Stir until combined and crumbly. If using, fold in the chopped nuts.
  4. Assemble the Crumble: Evenly spread the crumble topping over the cherry filling in the baking dish.
  5. Bake: Bake in the preheated oven for about 25-30 minutes, or until the topping is golden brown and the cherries are bubbling.
  6. Cool and Serve: Allow the cherry crumble to cool for a few minutes before serving. It can be enjoyed warm or at room temperature.

Notes

Enjoy it warm with a dollop of unsweetened Greek yogurt or a scoop of banana-based nice cream. For added crunch, sprinkle chopped nuts or toasted oats on top before serving!
