  • 2 cups baby spinach or kale
  • ¼ cup grated Parmesan (optional)
  • Fresh basil or parsley for garnish

Instructions

  • Sauté the base Heat olive oil in a large pot over medium heat. Add onion, celery, and carrots. Cook until softened (about 7 minutes). Stir in garlic, oregano, and basil.
  • Build the broth Add crushed tomatoes and broth. Bring to a boil, then reduce heat and simmer for 10 minutes.
  • Add veggies and beans Stir in green beans and kidney beans. Simmer for another 10 minutes.
  • Cook the pasta Add pasta and cook until al dente (about 8–10 minutes). Stir occasionally.
  • Finish with greens Stir in spinach or kale until wilted. Season with salt and pepper.
  • Serve and garnish Ladle into bowls. Top with Parmesan and fresh herbs if desired.
