Instructions

  • Knead: Knead on a floured surface for 10 minutes until smooth and elastic.
  • First rise: Place dough in an oiled bowl, cover with a damp towel, and let rise for 1 hour until doubled.
  • Shape bagels: Punch down dough, divide into 8 pieces, roll into balls, and poke a hole in the center. Stretch to form rings.
  • Rest: Place shaped bagels on a lightly oiled tray, cover, and let rest for 10 minutes.
  • Boil: Bring water and honey to a boil. Boil bagels 1 minute per side for chewiness.
  • Top & bake: Add toppings while wet or brush with egg wash. Bake at 425°F (220°C) for 20–25 minutes until golden brown.

These bagels taste best when enjoyed fresh out of the oven, but you can also slice and freeze them for later.
