Ingredients
For the dough:
- 2 tsp active dry yeast
- 4½ tsp granulated sugar
- 1¼ cups warm water (divided)
- 3½ cups high-gluten or bread flour
- 1½ tsp salt
For boiling:
- Large pot of water
- 1 tbsp honey or barley malt syrup
Optional toppings:
- Sesame seeds, poppy seeds, dried onion flakes, coarse salt, everything seasoning
Instructions
- Activate yeast: In ½ cup warm water, add sugar and yeast. Let sit for 5 minutes, then stir to dissolve.
- Make dough: In a large bowl, mix flour and salt. Create a well and pour in yeast mixture and remaining water. Mix until a firm dough forms.
- Knead: Knead on a floured surface for 10 minutes until smooth and elastic.
- First rise: Place dough in an oiled bowl, cover with a damp towel, and let rise for 1 hour until doubled.
- Shape bagels: Punch down dough, divide into 8 pieces, roll into balls, and poke a hole in the center. Stretch to form rings.
- Rest: Place shaped bagels on a lightly oiled tray, cover, and let rest for 10 minutes.
- Boil: Bring water and honey to a boil. Boil bagels 1 minute per side for chewiness.
- Top & bake: Add toppings while wet or brush with egg wash. Bake at 425°F (220°C) for 20–25 minutes until golden brown.
Notes
These bagels taste best when enjoyed fresh out of the oven, but you can also slice and freeze them for later. Try topping them with cream cheese, smoked salmon, or even a drizzle of honey for different flavors. You can also get creative by adding sesame seeds, poppy seeds, or everything bagel seasoning before baking for an extra crunch and flavor boost
