Description
Superfood granola is a twist on the classic granola recipe, enriched with ingredients that are packed with high nutritional value. Unlike regular granola, superfood granola contains nutrient-dense additions such as hemp hearts, chia seeds, spirulina powder, and other health-boosting ingredients. These ingredients provide more than just texture and flavor—they’re full of antioxidants, omega-3 fatty acids, vitamins, and minerals.
Ingredients
Dry Ingredients:
- 3 cups rolled oats (gluten-free if needed)
- 1/2 cup nuts (e.g., almonds, walnuts, pecans, or cashews), roughly chopped
- 1/2 cup seeds (e.g., chia seeds, flaxseeds, sunflower seeds, or pumpkin seeds)
- 1/4 cup unsweetened shredded coconut (optional)
- 1/2 cup dried fruit (e.g., cranberries, raisins, goji berries, or chopped apricots)
- 2 tablespoons hemp hearts (optional)
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
Wet Ingredients:
- 1/3 cup coconut oil (or another neutral oil like avocado oil), melted
- 1/3 cup maple syrup (or honey for non-vegan option)
- 1 teaspoon vanilla extract
Instructions
1. Preheat the Oven:
Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper.
2. Mix the Dry Ingredients:
In a large mixing bowl, combine the rolled oats, nuts, seeds, shredded coconut (if using), cinnamon, and salt. Stir to combine.
3. Prepare the Wet Ingredients:
In a small bowl, whisk together the melted coconut oil, maple syrup, and vanilla extract until well combined.
4. Combine Wet and Dry Ingredients:
Pour the wet ingredients over the dry mixture and stir until everything is evenly coated.
5. Spread and Bake:
- Spread the granola mixture evenly onto the prepared baking sheet.
- Bake for 20-25 minutes, stirring halfway through to ensure even browning. Keep an eye on it to prevent burning—it should be golden and fragrant.
6. Cool and Add Dried Fruits:
Once baked, remove the granola from the oven and let it cool completely on the baking sheet. Stir in the dried fruits (and cacao nibs or chocolate chips if using) after cooling.
7. Store:
Transfer the granola to an airtight container and store at room temperature for up to 2 weeks.
Notes
Enjoy this crunchy granola with yogurt, milk, or smoothie bowls. Store it in an airtight jar for up to two weeks. You can also mix in dried fruits or dark chocolate chips after baking for extra flavor and variety!
