Instructions
Start by preheating your oven to 180°C (350°F), or Gas Mark 4. This temperature will help caramelize the honey as the plums bake, giving them a lovely golden finish while retaining their shape.
Halve and pit the plums, making sure to remove the stone from each fruit. Place the plum halves cut-side up in a baking dish, ensuring that they are spread out evenly.
Drizzle 2 tablespoons of clear honey over the plums. This will add a natural sweetness to the fruit and help create a beautiful caramelized glaze as they bake. Make sure each half of the plum gets a nice coating of honey.
Place the baking dish in the preheated oven and bake for 15 to 20 minutes, or until the plums are tender but still holding their shape. The honey will bubble and create a delicious syrup, while the plums soften but remain intact.
While the plums are baking, prepare the mascarpone cream. In a medium mixing bowl, whisk the 250g of mascarpone with 1 tablespoon of honey. If you’d like to enhance the flavor, you can add 1 tablespoon of caster sugar and a splash of orange blossom water (optional), which will bring a delicate floral note to the cream. Whisk until the mixture is smooth and creamy.
Once the plums are done, remove them from the oven and let them cool slightly. Spoon the warm plums into bowls, then top with the mascarpone cream. Garnish with chopped pistachios and crushed Viennese biscuits for a delightful crunch and added flavor.
Notes
For an extra indulgent twist, sprinkle some crushed pistachios or toasted almonds on top before serving. Want to make it dairy-free? Swap mascarpone with whipped coconut cream. This dessert is best enjoyed warm, but chilled leftovers make a great topping for morning oatmeal or yogurt too!
