  • 1/4 cup (60ml) olive oil
  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • Salt and pepper, to taste
  • 1/4 cup (15g) fresh parsley, chopped (optional)

Instructions

Step 1: Prepare the Vegetables

  1. In a large mixing bowl, combine the drained and rinsed mixed beanscherry tomatoesred onion, and bell pepper. Toss gently to mix the ingredients evenly.

Step 2: Make the Dressing

  1. In a small bowl or jar, whisk together the olive oilhoneyDijon mustardapple cider vinegarsalt, and pepper. If using a jar, you can seal it and shake until well combined.

Step 3: Combine and Toss

  1. Pour the dressing over the bean and vegetable mixture. Toss gently to ensure all the ingredients are well coated with the dressing.

Step 4: Chill and Serve

  1. For the best flavor, let the salad chill in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld together.
