It’s a perfect example of a meal that’s both delicious and packed with essential nutrients, making it ideal for a nutritious weeknight dinner.

Ingredients

Scale

For the Salmon:

  • 4 salmon fillets

  • 3 tablespoons honey

  • 2 tablespoons soy sauce

  • 1 tablespoon olive oil

  • 1 garlic clove, minced

  • Salt and pepper to taste

  • Lemon wedges (for serving)

For the Potatoes:

  • 4 medium potatoes, diced

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • Fresh herbs (such as rosemary or thyme), optional

For the Spinach:

  • 4 cups fresh spinach

  • 1 tablespoon olive oil

  • 2 garlic cloves, minced

  • Salt and pepper to taste

Instructions

Step 1: Prepare the Potatoes

  • Preheat your oven to 400°F (200°C).

  • In a bowl, toss the diced potatoes with olive oil, salt, pepper, and any fresh herbs (like rosemary or thyme) you’re using.

  • Spread the potatoes evenly on a baking sheet in a single layer to ensure they roast properly.

  • Roast in the oven for 25-30 minutes, flipping halfway through, until the potatoes are golden and tender.

Step 2: Prepare the Salmon

  • While the potatoes are roasting, take a small bowl and mix together honey, soy sauce, olive oil, minced garlic, salt, and pepper.

  • Place the salmon fillets in a baking dish, and pour the honey mixture over the top, ensuring the fillets are coated evenly.

  • Bake the salmon in the oven for 15-20 minutes (depending on the thickness of your fillets), or until it is cooked through and flakes easily with a fork.

Step 3: Sauté the Spinach

  • In a large skillet, heat olive oil over medium heat.

  • Add the minced garlic and sauté for about 30 seconds until fragrant.

  • Add the fresh spinach to the skillet and sauté until it wilts, which should take about 2-3 minutes. Season with salt and pepper to taste.

Step 4: Serve

  • Plate the roasted potatoes on each serving plate.

  • Place the honey-glazed salmon fillet on top of the potatoes.

  • Add a generous helping of the sautéed spinach on the side.

  • Garnish with fresh lemon wedges for extra flavor and a touch of acidity to balance the sweetness of the honey glaze.

Notes

For extra flavor, drizzle a bit of lemon juice over the salmon just before serving, and garnish with freshly chopped dill or parsley. Want to spice it up? Add a pinch of red pepper flakes to the honey glaze for a subtle kick!
