Instructions

1. Toast the Tortillas

  • Heat 1 tbsp oil in a large oven-safe skillet over medium-high heat.

  • Add tortilla pieces and cook until golden and crisp.

  • Remove and set aside.


2. Build the Base

  • Add another tablespoon of oil to the skillet.

  • Stir in beans and ½ cup ranchero sauce, warming through (2–3 minutes).

  • Nestle the crispy tortillas into the mixture.


3. Add the Eggs

4. Cook
