Iced Coffee Icebox Cake

Iced Coffee Icebox Cake Recipe: A Delicious No-Bake Dessert for Coffee Lovers

  • Author: David Andersson
  • Total Time: 4 hours (including chilling)
  • Diet: Vegetarian

Description

An Iced Coffee Icebox Cake is a decadent dessert made with layers of chocolate wafer cookies (or graham crackers), whipped coffee cream, and a few other simple ingredients. This cake doesn’t require any baking, as it relies on the power of chilling to create a smooth, creamy texture. The “icebox” refers to the method of chilling the cake in the refrigerator, which helps the cookies soften and absorb the flavors of the whipped cream, transforming the dessert into a cake-like consistency.

Ingredients

Scale

For the Cake:

  • 2 cups heavy whipping cream (cold)
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup strong brewed coffee (cooled)
  • 1 package (about 14 ounces) chocolate wafer cookies or graham crackers

For the Topping (optional):

  • Cocoa powder, chocolate shavings, or coffee beans for garnish

Instructions

  1. Whip the Cream:
    • In a large mixing bowl, combine the heavy whipping cream, powdered sugar, vanilla extract, and cooled coffee.
    • Using a hand mixer or stand mixer, whip the mixture until stiff peaks form. Be careful not to over-whip.
  2. Assemble the Cake:
    • Spread a thin layer of the whipped coffee cream on the bottom of a 9×5-inch loaf pan or on a serving platter (this helps hold the first layer in place).
    • Add a single layer of chocolate wafer cookies or graham crackers over the cream.
    • Spread a generous layer of whipped coffee cream over the cookies.
    • Repeat the layering process (cookies, then cream) until you run out of ingredients, ending with a layer of cream on top.
  3. Chill:
    • Cover the cake with plastic wrap and refrigerate for at least 6 hours or overnight. This allows the cookies to soften and meld with the cream for a cake-like texture.
  4. Serve:
    • When ready to serve, carefully remove the cake from the loaf pan if using one (you can use parchment paper to help lift it out) or serve directly from the platter.
    • Garnish with cocoa powder, chocolate shavings, or coffee beans, if desired.
    • Slice and enjoy!

Notes

Chill the cake overnight for the best texture and flavor. Love a stronger coffee kick? Use espresso or add a splash of coffee liqueur to the cream. This no-bake treat is perfect for summer days — refreshing, creamy, and guaranteed to impress your guests!
