Instructions
- Preheat Oven and Prepare Ramekins: Preheat your oven to 375°F (190°C). Lightly grease two 6-8 ounce ramekins. You can also place the ramekins on a baking sheet to catch any drips.
- Prepare the Peach Filling: Wash, peel (if desired), and dice the peaches into bite-sized pieces. In a small bowl, combine the diced peaches, sugar, lemon juice, cornstarch, cinnamon, and a pinch of salt. Stir until the peaches are evenly coated.
- Make the Cobbler Topping: In a separate small bowl, whisk together the flour, sugar, baking powder, and salt.
- Assemble the Cobblers: Divide the peach mixture evenly between the two prepared ramekins.
- Add the Topping: To the dry ingredients for the topping, add the melted butter, milk, and vanilla. Mix with a fork until a thick dough or batter forms. The texture can vary—some recipes create a more biscuit-like topping, while others are more cake-like. Do not overmix.
