Ingredients
- Beans:
- 1 cup dried chickpeas (or 2 cans, drained and rinsed)
- 1 cup dried kidney beans (or 2 cans, drained and rinsed)
- Vegetables:
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 medium carrots, diced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 can (14 oz) diced tomatoes
- Liquids:
- 4 cups vegetable broth
- 2 tablespoons harissa paste (adjust to taste)
- Spices:
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Garnish:
- Fresh cilantro or parsley, chopped
- Lemon wedges
Instructions
- Prepare the Beans:
- If using dried beans, soak them overnight and rinse before using. If using canned beans, drain and rinse them.
- Sauté Vegetables:
- Set the Instant Pot to the sauté function. Add a little oil and sauté the onion, garlic, carrots, and bell pepper for about 5 minutes until softened.
- Add Zucchini and Spices:
- Stir in the zucchini, cumin, smoked paprika, and harissa paste. Cook for another 2 minutes.
- Combine Ingredients:
- Add the soaked (or canned) beans, diced tomatoes, and vegetable broth. Stir well to combine.
- Pressure Cook:
- Close the lid and set the Instant Pot to manual high pressure for 35 minutes if using dried beans (or 10 minutes for canned beans). Make sure the valve is set to sealing.
- Release Pressure:
- Once cooking is complete, allow for a natural pressure release for about 10 minutes, then carefully perform a quick release for any remaining pressure.
- Season and Serve:
- Open the lid, stir the stew, and season with salt and pepper to taste. Serve hot, garnished with fresh cilantro or parsley and lemon wedges.
Notes
