Instructions

1. Cook the Coconut Rice:

  • Combine rice, coconut milk, water, and salt in a saucepan.
  • Bring to a boil, then reduce heat to low.
  • Cover and simmer for 15 minutes until rice is tender and liquid is absorbed.
  • Fluff with a fork and set aside.

2. Prepare the Mango Salsa:

  • In a bowl, mix mango, red onion, cilantro, lime juice, and salt.
  • Chill until ready to serve.

3. Cook the Jerk Chicken:

  • Season chicken with jerk seasoning and salt.
  • Heat olive oil in a skillet over medium-high heat.
  • Cook chicken 5–6 minutes per side until nicely charred and cooked through.
  • Let rest, then slice.

4. Assemble:

  • Serve sliced jerk chicken over coconut rice.
  • Top with mango salsa and a squeeze of lime.
