Ingredients

- 250g curly kale, stems removed
- 3 tbsp white-wine vinegar
- ¼ red cabbage (150g), finely shredded
- ¼ white cabbage (150g), finely shredded

- A handful of flat-leaf parsley, roughly chopped
- A handful of dill, roughly chopped
- 100g toasted hazelnuts, roughly chopped
- Salt and freshly ground black pepper, to taste
For the Dressing
- 100ml soured cream
- 100ml natural yogurt
- 2 tsp Dijon mustard
- 2 tbsp extra-virgin olive oil
- Juice of 1 lemon
Instructions
1. Prepare the Kale
- Shred the kale leaves and place them in a large bowl.
- Drizzle with white-wine vinegar and sprinkle lightly with salt.
- Massage the leaves gently for a couple of minutes to tenderize them.
2. Crisp the Cabbage
- Immerse shredded red and white cabbage in a bowl of iced water.
- Let sit for about 5 minutes, then drain and pat dry to enhance crispiness.
3. Combine Vegetables
- Add julienned carrots, sliced onion, and chopped herbs to the kale.
- Mix well to evenly distribute flavors.
4. Make the Dressing
- In a bowl, whisk together soured cream, yogurt, Dijon mustard, olive oil, and lemon juice.
- Season with salt and black pepper to taste.
5. Assemble the Slaw
- Pour the creamy dressing over the kale mixture and toss gently until well coated.
6. Add the Hazelnuts
- Mix in three-quarters of the toasted hazelnuts for texture enhancement.
- Transfer the slaw to a serving bowl and scatter the remaining hazelnuts on top before serving.
