Ingredients

Instructions
Preheat Oven:
Preheat to 325°F (160°C).
Line a 12-cup mini muffin pan with paper liners or use silicone molds.
Make the Crust:
In a small bowl, combine almond flour, melted butter, sweetener, and vanilla.
Divide evenly among muffin cups (about 1 tsp each).
Press down firmly to form the crust.
Bake for 5–7 minutes, then let cool.
Prepare Berry Swirl:
In a small saucepan, combine berries, sweetener, and lemon juice.
Cook over medium heat until berries soften (about 5 minutes).
Mash with a fork and simmer until slightly thickened.
Strain to remove seeds (optional) and let cool.
Make the Cheesecake Filling:
Beat cream cheese and sweetener until smooth and fluffy.
Add egg, vanilla, and sour cream; mix until creamy (don’t overbeat).
Assemble Bites:
Spoon cheesecake mixture evenly over cooled crusts.
Add a small dollop of berry sauce on top of each and swirl gently with a toothpick or skewer.
Bake:
Bake for 15–18 minutes, until centers are just set.
Cool completely, then refrigerate for 1–2 hours to firm up.
Serve:
Carefully remove from liners, garnish with a fresh berry if desired, and enjoy chilled!
