  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon gochujang (Korean chili paste) or to taste (optional)
  • 1 teaspoon black pepper
  • 2 green onions, chopped (for garnish)
  • 1 tablespoon sesame seeds (for garnish)

For the Rice:

  • 2 cups cooked jasmine or short-grain rice
  • 1 tablespoon rice vinegar (optional, for flavor)
  • Salt to taste

For Serving:

  • Kimchi (store-bought or homemade)
  • Sliced cucumbers or pickled radishes (optional)
  • Additional green onions for garnish
  • Fried eggs (optional)

Instructions

  1. Marinate the Beef:
    • In a bowl, combine the soy sauce, brown sugar, sesame oil, rice vinegar, minced garlic, grated ginger, gochujang (if using), and black pepper.
    • Add the thinly sliced beef to the marinade, making sure it’s well coated. Marinate for at least 30 minutes (up to 2 hours in the refrigerator for more flavor).
  2. Prepare the Rice:
    • If desired, mix the cooked rice with rice vinegar and a pinch of salt for added flavor. Set aside.
  3. Cook the Beef:
    • Heat a large skillet or wok over medium-high heat. Add a little oil if needed.
    • Add the marinated beef in a single layer (you may need to do this in batches). Cook for about 2-3 minutes on each side until browned and cooked through. Remove from heat.
  4. Assemble the Bowls:
    • In each bowl, place a serving of the seasoned rice.
    • Top with the cooked beef bulgogi.
    • Add a generous serving of kimchi on the side.
    • Garnish with chopped green onions and sesame seeds. If using, add sliced cucumbers or pickled radishes and a fried egg on top.
