Lavender & Lemon Breakfast Rolls are a delightful pastry made from a soft, sweet dough infused with lemon zest and dried culinary lavender. Ingredients
For the Dough:
3 ½ cups (440 g) all-purpose flour
¼ cup (50 g) sugar
1 tsp salt
2 ¼ tsp (1 packet) instant yeast
1 cup (240 ml) warm milk
1 large egg
½ cup (115 g) unsalted butter, softened
1 tsp lemon zest
1 tsp dried culinary lavender
For the Lemon Glaze:
1 cup (120 g) powdered sugar
2–3 tbsp fresh lemon juice
Optional: Extra lavender for garnish
Instructions
Make the Dough
In a large bowl, mix flour, sugar, salt, and yeast.
In another bowl, whisk warm milk and egg. Add to dry ingredients and mix until combined.
Knead in softened butter, then lemon zest and lavender, until dough is smooth and elastic (about 8–10 minutes by hand, or 5–6 minutes with a mixer).
Cover and let rise 1–1 ½ hours, until doubled in size.
Shape the Rolls
Punch down the dough and divide into 12 equal pieces.
Shape each piece into a smooth ball and place on a parchment-lined baking sheet or in a greased 9×13-inch pan.
Cover and let rise another 30–40 minutes.
Bake
Preheat oven to 350°F (175°C).
Bake rolls for 20–25 minutes, until golden brown.
Remove from oven and let cool slightly.
Glaze & Finish
Whisk powdered sugar with lemon juice until smooth. Adjust thickness by adding more sugar or juice.
Drizzle glaze over warm rolls and sprinkle lightly with extra lavender if desired.
