The Lazy Girl Enchilada Skillet is a deconstructed version of the classic Mexican-inspired dish. Instead of filling individual tortillas and lining them up in a baking dish, everything happens in a single pan. It combines protein, hearty beans, corn, and pieces of corn or flour tortillas directly into a simmering pool of savory enchilada sauce.
Ingredients
1 tbsp oil
1 lb ground beef or turkey (or rotisserie chicken = even lazier)
1 packet taco seasoning (or chili powder + cumin)
1 (10 oz) can enchilada sauce (red or green)
1 (15 oz) can black beans, drained
1 cup frozen corn (optional but elite)
3–4 small tortillas, cut into strips or squares
1–1½ cups shredded cheese (Mexican blend or cheddar)
Instructions
Brown the meat
Heat oil in a large skillet. Cook meat until browned. Drain excess grease if needed.Season & sauce it up
Stir in taco seasoning + enchilada sauce.Bulk it up
Add black beans and corn. Stir and let it simmer 3–5 minutes.Tortilla moment
Mix in tortilla pieces so they soak up the sauce (enchilada lasagna energy).Cheese blanket
Sprinkle cheese over everything. Cover and let melt (2–3 min).Eat immediately
